























Fabian Acevedo was raised on his family’s coffee farms, where coffee has shaped daily life for generations. His parents, Álvaro and Triana, began focusing more seriously on high-quality coffee production in 2006, and over time Fabian became increasingly involved in the work himself. Although he explored other directions for a period of time, he eventually returned to coffee with a new perspective and a deeper appreciation for how much intention goes into producing truly exceptional lots.
Back on the farm, Fabian focused heavily on refining the processing systems his family had built over the years. Careful harvesting, controlled fermentation, and consistent drying practices became central to the way they approached quality. The family has also worked to renew varieties better suited to their climate and conditions, helping strengthen both the health of the farm and the consistency of the coffee they produce. What stands out most is the level of care placed on every part of the process. Nothing feels rushed or overlooked.
For Fabian, coffee is closely tied to family and to the responsibility of carrying something meaningful forward. Each harvest represents years of learning and observation, but also the continued effort to improve little by little every season. That mindset shows up clearly in the cup and in the way the farm continues to evolve over time.
